I know it was too late, but at least I started. Yesterday's dinner was quick and easy – after hours in crowded shops I didn't feel to spend hours in my kitchen. I quickly fried lovely pieces of fresh Norwegian cod and served them with the salad of rocket and fried bacon. You can of' course drop cod and take a slice of fresh bread accompanying this salad. This would make the salad as a main dish.

Do you have these ingredients?

250 g rocket
2 tbsp olive oil
¼ lemon
2 garlic cloves

300 g bacon

salt, pepper

Step for step

Wash and dry the rocket.
Pour the olive oil into a glass.
Squeeze the lemon juice into the olive oil.
Peel and squeeze the garlic into the oil mix.
Whisk together all the ingredients and add the dressing to the rocket.
Thoroughly mix through the rocket salad.

Chop the bacon and fry it.
Add the fried bacon to the salad and mix.
Season.

Enjoy!
ranjasfoodietales.blogspot.com

White Fish under Beet-Achovy Sauce

Of some reason Danish people always relate red beets to Russians. Poor pictures and good old recipes. For the last 3 days I skipped hundreds of photos and read hundreds of recipes. Todays dinner is an outcome of all information consumed and digested the last days.

Presumed you already have a cooked rice, this is a real quicky.

Do you have these ingredients?

1 cup cooked rice (I took basmati)
1 red onion
1 cup green grapes
½ tsp coriander
½ tsp cumin
1-2 tbsp olive oil
salt, pepper

Step for step

Peel and chop the onion. Set aside.
Wash and halve the grapes. Set aside.
Heat the oliven oil in skillet.
Add the coriander and cumin, cook for 1 min.
Add the onion, cook for 2-3 mins.
Add the rice, mix and cook for 2-3 mins.
Season and add the grapes. Mix and cook for 1 more min.

Enjoy!
ranjasfoodietales.blogspot.com

Indian Apple Halawa

After I bought the book 50 Great Curries of India by Camellia Panjabi a new world opened a door for me. Of'course I have eaten Indian before, in restaurants and take aways. But cooking curries on my own is definitely a new step for me. This dessert is from this book, I only adjusted 2 things – I cooked evaporated milk on my own and I substituted ghee by butter (not a smart thing to do, I know...).

Do you have these ingredients?

10 apples
½ lemon
4-5 tbsp sugar
10 g butter
1 cinnamon stick
5-6 cloves
handful raisins
4-5 tbsp evaporated milk

Step for step

Wash and peel the apples.
Grate them and sprinkle with the sugar.
Add the lemon juice and mix well.

Heat the butter in the skillet.
Add the cinnamon stick and cloves, cook for 1 min.
Add the apples and cook over a high heat for 10 mins.
Add the milk and raisins and cook over a high heat for 8 mins.

Serve warm or cold. Well, it is true that the most of them are to find outside on summer nights but when you got short summer, you outa enjoy it as much as you can. But really social people in Oslo get in October - when the fall is a factum, fireplaces comfort by dancing flames and it is a time for a glass of red wine. I was invited to my friends on Fri, I got friends over to my place on Saturday. And the best you can serve for these days is this comfort pie. Or tart.

Adjusted this recipe.

Do you have these ingredients?

125 g butter
250 g flour
cold water

2 red onions
50 g cheddar
180 g brie
200 m creme fraiche
2 eggs

oliven oil
salt, pepper

Step for step

Process the butter, flour, salt and a little water in the food process.
Butter the form and roll out the dough into the form (I used my hands)
Pick the dough in the form by the form and put the form into the fridge.

Peel the onion and slice.
Heat the oil in the skillet and cool the onion for 15 mins.

Grate the cheddar. To be honest, there are not so many Indian restaurants in Oslo, and as some Indian people say, the Indian restaurants in Oslo are actually Pakistani. There is a little place called Curry and Ketchup, a budget cafeteria run by cheerful dark haired immigrants serving colorful curries on all fasons and colors plates (you never get the same plate in this cafe, believe me on this!). There is a spacious restaurant Gate of India made in old fashioned apartment in the city, you can sit there in comfort red velvet armchair and sip Indian white wine. Very polite Swedish speaking waitress will bring you hot nan bread and ask if you like the view of the busy Bogstadveien. But no matter, the case is that I know nothing about Indian food except of that nan bread is tasty and garam masala has something with chicken to do. Never too late to learn. Based on several recipes from BBC Good Food, I made this dish yesterday inspired by Indian smells and tastes.

Do you have these ingredients?

2 cups of chopped pineapple
500 g frozen unpeeled prawns
1 red chili
1 green chili

2 tsp garam masala
1 tsp turmeric
3 tsp tamarind
400 g coconut milk

vegetable oil
salt, pepper

Step for step

Defrost the prawns.
Peel and chop the pineapple.
