Pear Oat Pancakes




























Christmas holiday means lazy mornings and long family breakfasts. For today's breakfast I cooked these easy made pancakes. Really food for holiday breakfast.

Do you have these ingredients?

200 ml kefir
100 ml porridge oats
1 pear
100 ml flour
1 tsp bake powder
2 tbsp sucker
pinch of salt
2 eggs

butter for frying

Step for step

Mix the kefir and oats and set aside for 10-15 mins.
Peel and grate the pear.
Stir in the grated pear.
Add all the other ingredients and mix well.

Heat the butter in the frying pan and add the batter in tablespoonfuls.
Cook all the pancakes and serve with jam poured over.

Fried Bacon Rocket Salad





























Yesterday was Christmas presents shopping day. I know it was too late, but at least I started. Yesterday's dinner was quick and easy – after hours in crowded shops I didn't feel to spend hours in my kitchen. I quickly fried lovely pieces of fresh Norwegian cod and served them with the salad of rocket and fried bacon. You can of' course drop cod and take a slice of fresh bread accompanying this salad. This would make the salad as a main dish.

Do you have these ingredients?

250 g rocket
2 tbsp olive oil
¼ lemon
2 garlic cloves

300 g bacon

salt, pepper

Step for step

Wash and dry the rocket.
Pour the olive oil into a glass.
Squeeze the lemon juice into the olive oil.
Peel and squeeze the garlic into the oil mix.
Whisk together all the ingredients and add the dressing to the rocket.
Thoroughly mix through the rocket salad.

Chop the bacon and fry it.
Add the fried bacon to the salad and mix.
Season.

White Fish under Beet-Achovy Sauce




























Of some reason Danish people always relate red beets to Russians. I am sure the Russian soup Bortsh is guilty, however when Danish name beets and anchovies sauce as Russian, I do not agree. But I really like this kind of sauce.

Do you have these ingredients?

1 beet
½ red onion
3 garlic cloves
6 anchovies
2 tbsp capers
3 tbsp olive oil

1,5-2 tbsp flour
600 g white fish file (I took cod)
половина красной луковицы

olive oil
salt, pepper

Step for step

Divide/chop the beet in 4 pieces and cook it in a pot of boiling water.

Peel the onion and chop finely.
Peel the garlic and chop finely.
Chop the capers.
Chop the anchovies.

Peel the cooked beet and grate it.

Heat the oil in the skillet.
Add the onion and garlic. Cook for 3 mins.
Add the grated beet and cook for 2 mins.
Add the anchovies and capers. Cook for 1 min.
Set aside.

Slice the fish into portion pieces. Season.
Dredge the fish pieces in the flour.
Heat the oil in the skillet and fry the fish turning it once.
Transfer the fish to the plates and drizzle the sauce over it.

Tomato-Anchovy Pasta with Zucchini




























While Oslo was hosting Obama and Norwegian celebrities were attending the banquet in honor for Obama, I prepared this easy pasta dish. For anchovy lovers.

Do you have these ingredients?

500 g penne
1 zucchini
1 red onion
3 garlic cloves
150 ml tomato sauce (homemade, with oregano)
¼ cup anchovies
¼ cup oil from the anchovy box
½ cup grated parmesan

Step for step

Slice the zucchini.
Peel and chop the onion.
Peel and chop the garlic.
Chop the anchovies.

Heat anchovy oil in the skillet.
Add the onion and garlic, stir for 5 mins.
Add the anchovies, stir for 2 mins.
Add the tomato sauce, stir for 5 mins.
Set aside.

Cook the penne in large pot of boiling water for 9 mins.
Add the zucchini and cook for 1-2 mins.
Reserve ¾ cup cooking liquid.

Add the cooking liquid to the tomato-anchovy sauce in the skillet and get to boil.
Stir for 1-2 mins.

Mix the pasta and zucchini with the tomato-anchovy sauce.
Season, sprinkle with the grated parmesan and server.

Coriander Tomato Tiger Prawns




























I know the winter is rolling out. But still we can drink white wine...

Do you have these ingredients?

500 g tiger prawns

7 tomatoes
2 cups frozen peas

1 piece fresh ginger
2 garlic cloves
1 green chili

2 handfuls fresh coriander

salt, pepper

Step for step

Take the frozen peas from the freezer.

Slice the tomatoes crosswise and place into a bowl.
Pour the boiling water over and set aside.
Peel, seed and roughly chop the tomatoes.

Peel and chop the ginger.
Peel and chop the garlic.
Seed and chop the green chili.
Chop the coriander.

Place the chopped tomatoes, ginger, garlic, chilin and one handful coriander into the blender and process.
Pour the sauce into the skillet and bring to the boil.
Let simmer for 15 mins.

Meanwhile peel and prawns.

Add to the tomato sauce the peas, bring to the boil and let simmer 1-2 mins.
Add the prawns, mix and let simmer until the prawns get pink color.
Season and sprinkle with the remaining handful chopped coriander.

Brown Lentils Soup with Coriander Salsa





























Congratulations with the first winter day! It is cold, it is dark, and this is a winter food.

Do you have these ingredients?

1 cup brown lentils
2 cups chicken stock
3 bay leaves
½ tsp coriander


2 tomatoes
1 red onion
handful of chopped coriander
½ tbsp crème fraiche

salt, pepper

Step for step

Add lentils and the spices to the skillet.
Pour the stock, season and bring to the boil
Simmer for 25 mins.
Blend until chunky.

Peel and chop the red onion.
Chop the tomatoes, the onion and the coriander.
Add the crème fraiche and mix.

Serve the soup with a spoon of the salsa on the top.
