Fried Rice with Grapes

Last Saturday my husband visited the local flea market. He was there for 30 mins but came back with 2 suitcases filled with old cookbooks. Now I am a happy owner of 50 (or more) cookbooks from the seventies and eighties. Poor pictures and good old recipes. For the last 3 days I skipped hundreds of photos and read hundreds of recipes. Todays dinner is an outcome of all information consumed and digested the last days.

Presumed you already have a cooked rice, this is a real quicky.

Do you have these ingredients?

1 cup cooked rice (I took basmati)
1 red onion
1 cup green grapes
½ tsp coriander
½ tsp cumin
1-2 tbsp olive oil
salt, pepper

Step for step

Peel and chop the onion. Set aside.
Wash and halve the grapes. Set aside.
Heat the oliven oil in skillet.
Add the coriander and cumin, cook for 1 min.
Add the onion, cook for 2-3 mins.
Add the rice, mix and cook for 2-3 mins.
Season and add the grapes. Mix and cook for 1 more min.

Enjoy!
