Chicken Cottage Cheese Cakes






















This is an easy quickly made dish, exactly what I needed yesterday. ...And it is getting cold here in Oslo, not fair...

Do you have these ingredients?

2 chicken breast, about 400 g
100 g cottage cheese
handful of chopped spring onions
14 leaves sage
1 tsp mustard
1 egg

3-4 breadcrumbs

salt, pepper
vegetable oil

Step for step:

Blitz the cottage c
hees in the food processor.

Chop roughly the chicken breasts and put into the food processor.
Add the spring onions, sage, egg and mustard and blitz again.
Season and mix.

Tip the breadcrumbs onto a large plate.
Form the cakes with wet hands and put each cakes into the breadcrumbs.

Heat the oil in a frying pan, then fry the cakes over a medium heat for about 8-10 minutes, turning once.

Enjoy.

Oatmeal Office Cookies


























Every Wednesday my colleagues are crowded in our office kitchen — it is the day when fruits and cookies baskets arrive in our office. Fruits are cheerful as always but the oatmeal cranberry cookies are worth to mention here. You can buy them in every supermarket — usually I never do that, it is really seldom we have cookies in my home — they are sweet, they are tasty and due to the oatmeal we can say they are healthy.

The recipe is taken from the cookies package, with small adjustments.

Do you have these ingredients?

For the dough:
145 g butter
210 g flout
210 g oatmeal
55 g brown sugar
80 g sugar
½ tsp salt
2 tst bakepowder

To add to the dough:
2 tbsp honey
2 handfuls yellow raisins
1 handful dried cranberries
50 ml water

Step for step:

Place all ingredients for the dough in the food processor and run it.
Add honey, raisins, cranberries and water and run the food processor again.
Form from the dough 2 rolls and put them into your fridge for 30 mins.

Slice the dogh rolls and put the dough slice on the baking sheet.
Heat the oven 200C, decrease the warmth to 175C and put the baking sheet into the oven.
Bake for 22 mins.

Red Onions and Brie Tart




























It is definitely not true that Norwegians got social only during summers. Well, it is true that the most of them are to find outside on summer nights but when you got short summer, you outa enjoy it as much as you can. But really social people in Oslo get in October - when the fall is a factum, fireplaces comfort by dancing flames and it is a time for a glass of red wine. I was invited to my friends on Fri, I got friends over to my place on Saturday. And the best you can serve for these days is this comfort pie. Or tart.

Do you have these ingredients?

125 g butter
250 g flour
cold water

2 red onions
50 g cheddar
180 g brie
200 m creme fraiche
2 eggs

oliven oil
salt, pepper

Step for step

Process the butter, flour, salt and a little water in the food process.
Butter the form and roll out the dough into the form (I used my hands)
Pick the dough in the form by the form and put the form into the fridge.

Peel the onion and slice.
Heat the oil in the skillet and cool the onion for 15 mins.

Grate the cheddar. Put it in the bowl.
Chop the brie, add to the bowl with the grated cheddar.
Add the creme fraiche and eggs.
Mix well.

Remove the form from the fridge.
Bake in the oven 220 C for 20 mins.
Remove the form from the oven.
Arrange the cooked onions in the tart shell.
Pour the cheese mix over the onions.
Bake in the over 200 C for 30 mins.

Roasted Tomatoes filled with Meatballs
























You can of' course serve good old homemade meatballs; they are easy to make, traditional in look and probably a little boring. But put meatballs in tomatoes and suddenly you got the same meatball but with a new touch. Why not?

Do you have these ingredients?

9 tomatoes
1 onion
400-500 гм ground beef
2 garlic cloves
80 ml semolina
handful sage leaves
vegetable oil
salt, pepper

Step for step

Remove the tomato tops and scope the tomatoes.
Drop a little oil in the form and arrange the tomatoes and the tomato tops in the form.
Bake in the over 180 C for 20 mins.

Peel and chop the onion.
Heat the oil in the skillet, add the onion and cook for 2-3 min.
Chop the outscooped tomato «meat», add to the onion. Cook for 3 mins.

Peel and chop the garlic.
Put the ground meat, garlic, onions, semoline and sage into the food processor and process.

Remove the form with the tomatoes from the oven.
Remove the tomato juice form the tomatoes.
Fill the tomatoes with the dough from the food processor-
Cover the filled tomatoes with the roasted tomato tops.

Bake in the over 180 C for 35 mins.
